Wine Tasting Notes The name "Karoyaka" means "lightness," a tribute to the pure expression and flavor profile of the sake. Known for their light, fruity, aromatic and lively profiles, Junmai Ginjo is one of the three major types of sake. Junmai ginjos are made with rice that is polished to 60% or less of the original size of the grain. More restrained in its aromatics than most junmai ginjos, Karoyaka offers well-balanced fruit-to-acidity, and is dry to taste. Its clean, light and subtly fruity character offers a perfect pairing for oysters, white fish (sashimi and grilled), salads and other light foods.
