The whiskey is swiftly aged in California wine barrels, allowing enough time to introduce subtle flavors of oak and vanilla, mature the whiskey slightly and showcase the true spice of 100% rye grain. By aging the whiskey in California wine barrels, the delicate flavors of the wine's fruit and spice are introduced to compliment the rye and create a well rounded approachable whiskey.

Proprietor, Austin Hope has applied his expertise in winemaking to the creation of Highspire Whiskey. We developed an aging method by creating a blend of oak staves to add into our barrels that does not take years to express the true distinctive flavor of 100% rye grain whiskey.
